Zusammenfassung: | PURPOSE:To obtain a crust-containing bakery product having good appearance and capable of seasoning to various tastes by blending crust as a filling material with dough for bakery product. CONSTITUTION:This crust-containing bakery product is obtained by mixing crust pieces, preferably seasoned crust pieces into dough for bakery product and baking the mixture. The method for producing the bakery product is to add 10-80wt.% of seasoned crust pieces obtained by seasoning and refrigerating or freezing crust and fragmenting the treated crust to dough for the bakery product and knead the crust pieces with the dough or laminate the crust pieces to the dough. Thereby, the discarded crust can effectively be recycled. |
