Zusammenfassung:PURPOSE: To obtain an antioxidant for squalene capable of effectively inhibiting oxidation of squalene without causing a problem such as coloring owing to mixing, comprising a phosphatidyl ethanolamine as an active component. CONSTITUTION: This antioxidant contains a phosphatidyl ethanolamine [e.g. egg yolk phosphatidyl ethanolamine obtained by dissolving egg yolk lecithin in chloroform, adding the resultant solution to silica gel column filled with chloroform and selectively collecting under flowing a chloloroform/methanol mixed solvent and has a purity of >=70wt.%, especially >=90wt.%] as an active component. Preferably, 0.01-5 pts.wt. of this antioxidant is used to 100 pts.wt. of squalene.
