Zusammenfassung: | PURPOSE: To obtain a confectionery, containing raisins, rich in flavor and keeping quality unfound in conventional raisins and having a new taste different from that of conventional sweetened ADZUKI beans. CONSTITUTION: Raisins prepared by drying various grapes in the sun, etc., are coated with readily volatile alcohols and grains are selected to carry out the preparation. A molasses liquid obtained by mixing molasses with an acid and a small amount of a perfume in alcohols is sprayed on the raisins while stirring the raisins to provide the raisins having the molasses liquid applied to the surfaces thereof. The resultant raisins are smeared with sugar to carry out the sugaring thereof. Thereby, the confectionery containing the raisins preservable for a long period without any defects in floating the molasses to the surfaces thereof and becoming sticky can be obtained. The alcohols used are not dispersed at this time without deteriorating the flavor, texture, etc. |
