Zusammenfassung:	PURPOSE: To obtain the compound useful as a raw material for medicines, foods and chemicals in a high productivity, by treating a galactosyl group- containing saccharide and sucrose, etc., with yeast belonging to the genus Rhodotorula or an enzyme capable of transferring a galactosyl group. CONSTITUTION: A galactosyl group-containing saccharide (e.g. lactose) and sucrose or maltose are treated with yeast (e.g. Rhodotorula marina) belonging to the genus Rhodotorula or an enzyme capable of transferring a gelactosyl group obtained from the yeast at 10-60 deg.C at pH2 to pH9 and the reaction solution is cooled and centrifuged to collent a supernatant liquid. The supernatant liquid is subjected to an active carbon column chromatography and unreacted lactose and sucrose are eluted with water and 10% ethanol. Then, a fraction eluted with 20-25% ethanol is collected, ethanol is removed and the residue is freeze-dried to give the objective galactooligosaccharide (e.g. lactosucrose) useful as an intermediate or an intermediate for medicines, foods and chemicals.
