Zusammenfassung:PURPOSE:To provide an inexpensive seasoning containing a specific phosphatase inhibitor and 5'-ribonucleotide, effective for preventing the decomposition of 5'-ribonucleotide caused by phosphatase in food to prevent the deterioration of taste and having delicious taste. CONSTITUTION:This seasoning contains (A) a phosphatase inhibitor selected from plants of the family Myristicaceae, Rutaceae, Pedaliaceae, Myrtaceae, Umbelliferae, Labiatae, Theaceae, Liliaceae, Legminosae, Solanaceae, Fagaceae or Polygonaceae, spices derived from the plants or their extracts (e.g. nutmeg, Japanese pepper, sesame or clove) and (B) a 5'-ribonucleotide (e.g. inosinic acid or adenosine phosphate). The amount of the seasoning is preferably 0.01-5% of the component A and 0.01-1% of the component B in the case of adding to foods, pickles, hams, etc., containing edible meat, vegetable and/or egg.
