Zusammenfassung:	PURPOSE:To obtain the subject cooked rice having dry palate feeling such as pilaf by packing feedstock rice in a cylindrical vessel with a perforated bottom plate, transferring the rice to hot water to cook it and by cooling the cooked rice through spraying it with cooling water followed by disaggregating it and then conducting hydro-extraction. CONSTITUTION:A specified amount of feedstock rice is packed in a cylindrical vessel 24 with a perforated plate, transferred to a hot water tank 20 through conveyers 14, 15 to effect pregelatinization of the surface of the rice. Then, the vessel 24, in an exposed state, is allowed to travel through a discharge conveyer 30 connected to a conveyer 22 and the rice is then fed, through a conveyer 36, to a cooling/disaggregating means 40 where the rice is sprayed with cooling water. The resultant cooked rice cooled to ca.30 deg.C or lower is subjected to hydro-extraction on a slant conveyer 54, and returned onto the conveyer 14 and then fed to the next step.
