Zusammenfassung:	PURPOSE:To provide the inhibitor exhibiting a good inhibiting action against mutagenic substances contained in daily environments such as the atmosphere or foods and capable of being ingested into bodies as a medicine or a specific healthy food for the prevention of cancers because having extremely high safety. CONSTITUTION:The mutagenic inhibitor contains at least a trihydric phenolic substance selected from dillapiole, apiole and myristicin. The trihydric phenolic substance can be recovered from the essential oils of Petroselinum crispum and/or Anethum graveolens L. and subsequently used.
