Zusammenfassung:PURPOSE:To enable to enjoy the flavor of regular coffee rich in the flavor only by the pouring of hot water, by controlling the concentration of the extract at a low level and subsequently concentrating the extract by a freezing concentration method. CONSTITUTION:An extract produced by roasting and grinding coffee beans and subsequently extracting the ground beans with an extraction machine to a concentration of BX 1 to 10 is concentrated into a concentration of BX 10 to 40 by a freezing concentration method. The obtained concentrated extract is fully changed in a small container or sealed in the small container while purging the head space of the container with an inert gas, and subsequently frozen. A container produced from a material slightly permitting the permeation of oxygen gas and volatile aromatic components, e.g. a container comprising a synthetic resin main body and a sheet-like lid produced from the laminate of a synthetic resin to a thermally vacuum-deposited metal, a container produced by shaping a metal-synthetic resin laminate film, etc., is used as the small container. Thereby, the flavor of a regular coffee rich in the flavor can be enjoyed simply by pouring hot water.
