Zusammenfassung:PURPOSE:To obtain a substance, capable of suppressing a rise in cholesterol, producible in a relatively simple production process and having excellent suppressing action on the rise in cholesterol at a low raw material cost. CONSTITUTION:Water is added to rye bran to extract a water-soluble ingredient and an alcohol is then added to the resultant extract solution to collect the formed precipitate, which, as necessary, is dried and powdered. The obtained substance consists essentially of proteins and a dietary fibrous substance and the saccharide composition containing the dietary fibrous substance consists essentially of arabinose, xylose and glucose. The peak of the molecular weight of glucides and proteins measured according to the gel filtration method is about 150000.
