CONSTITUTION:The surface of an enzyme is coated and modified with a fat- soluble substance having an isoprenoid structure (fat-soluble vitamins, sterols, etc.). Thereby, the objective modified enzyme capable of manifesting heat resistance in an organic solvent at a high temperature of >=60 deg.C with causing hardly any inactivation of the enzyme and stably producing useful substances by the enzymic reaction is obtained. |
