Zusammenfassung:PURPOSE:To provide a process for the preparation of an expanded food having unique snack-like palatability unattainable by a conventional dried aquatic product by drying an aquatic food such as fish, shellfish and alga and expanding the dried product. CONSTITUTION:The expanded food is prepared by preliminarily drying a raw aquatic food such as fish, shellfish and alga with heat and drying the product with hot air or by drying a preparatorily dried aquatic food such as fish, shellfish and alga with hot air to effect the expansion of the food.
