Zusammenfassung:PURPOSE:To provide a powdering technique capable of producing a product reduced in the vehicle content and remarkably low in stickiness in a dry state at a low cost, in a method for powdering enzymatically decomposed lecithin exhibiting functions as an emulsifier, a dispersant, etc., and a nourishing effect, a pharmacological action, etc. CONSTITUTION:The method for powdering enzymatically decomposed lecithin is carried out by emulsifying and dispersing paste-state enzymatically decomposed lecithin in an aqueous solution of a substance such as starch for constituting an outer layer and spray-drying the resultant dispersion immediately after formation of the dispersion and by adding a free fatty acid, etc., to paste-state enzymatically decomposed lecithin in advance, then emulsifying and dispersing the resultant paste-state mixture in an aqueous solution of an outer layer substance and subsequently spray-drying the obtained dispersion.
