Zusammenfassung:	PURPOSE:To readily, simply and completely remove an ovarian thin membrane on the surface of herring roe at a low cost by embrittling the ovarian thin membrane of the herring roe with a proteolytic enzyme, partially removing the thin membrane and then carrying out mechanical treatment. CONSTITUTION:An ovarian thin membrane covering the surface of herring roe is embrittled with a proteolytic enzyme to partially remove the ovarian thin membrane or mechanical treatment is carried out simultaneously with or after partial removal of the ovarian thin membrane to completely remove the remaining ovarian thin membrane. Specifically, the herring roe is dispersed in an aqueous solution containing a proteolytic enzyme added thereto and the dispersion water is preferably forcibly stirred to embrittle the ovarian thin membrane of the herring roe and completely remove the thin membrane by mechanical treatment.
