Zusammenfassung:PURPOSE:To obtain a seasoning composition useful for processed foods, eating- out industry, etc., having a biting feeling, duration and durability of aftertaste, body and excellent qualities, comprising a nucleic acid-based flavoring substance, a glutamic acid, potassium, lactic acid, etc., in a specific ratio. CONSTITUTION:The objective seasoning composition comprising (A) a nucleic acid-based flavoring substance such as sodium 5'-inosinate, (B) a glutamic acid, (C) potassium such as potassium chloride and (D) lactic acid, sodium lactate or potassium lactate in a molar ratio of the components A:B=1/2-40 and that of the components (A+B):C:D=1/5-80/10-80.
