CONSTITUTION:A tuna is frozen and the resultant frozen tuna 1 is cut into a round slice so as to provide 3cm thickness thereof while leaving the skin and bones. The tuna 1 cut into the round slice is subsequently dipped in a seasoning liquid for 48hr, air-dried for 8hr and subsequently smoked for 48hr.
