Zusammenfassung:PURPOSE:To obtain crystal of high-purity 1-kestose free from hygroscopicity by adding methanol to an aqueous solution containing 1-kestose prepared by culturing a fungus belonging to the genus Scopulariopsis as a main component, processing to dryness and further adding methanol. CONSTITUTION:Scopulariopsis.brevicaulis is cultured by using a medium containing sucrose as a carbon source to give a culture solution, from which a solid content such as cells are removed to give a 1-kestose-containing solution. The solution is treated with calcium oxide at two stages by changing the concentration to give 1-kestose highly containing syrup having a composition of 90-90% 1-kestose, 2-5% nystose, 3-8% mannitol and 2-12% sucrose. The syrup is dissolved in a proper amount of methanol, concentrated under high pressure to dryness, further dissolved in methanol, optionally mixed with 1-kestose crystallite, precipitated crystal is recovered to give granular crystal consisting essentially of 1-kestose having >=95% purity.
