Zusammenfassung:PURPOSE:To stir a fermentation solution by the utilization of a convection action of the solution to uniform the temperature of the unrefined sake in a fermentation tank, by disposing a specific filtration chamber in the bottom part of the fermentation tank, discharging the filtrate flowed into the filtration chamber in the upward direction and also pressing the filtrate into the fermentation tank. CONSTITUTION:A filtration chamber 2 made of a net or punched plate not permitting the passage of the solid contents of unrefined sake is formed in the bottom part of a fermentation tank 1. The rough filtrate flowed into the filtration chamber is pumped up with a pumping-up means 5 and subsequently fed into the upper part of the tank through a circulation pipe 4, and further the rough filtrate is pressed into the tank 1 by an upward-discharging stirring means 3 to produce a convection, thereby performing the objective stirring due to the convection action and to the circulation action.
