Zusammenfassung:	PURPOSE:To improve detergency, prevent deposition of milk scale or milk stone and lower cleaning temperature by incorporating protease in a weakly alkaline detergent composition. CONSTITUTION:A detergent formed by blending protease in a weakly alkaline detergent composition. The optimum pH for enzyme activity is 8-9 for the detergent. Since the enzyme used has a calcium-dependence, it cannot be mixed with a large amount of a chelating agent. Sodium cumenesulfonate is preferably used for preventing dirts from redepositing and as an auxiliary for the hydrolysis of oils and fats. It is further preferable to blend an antifoaming agent and also to blend a nonionic surfactant to improve the emulsifying and penetrating powers.
