Zusammenfassung:	PURPOSE:To obtain foam food having excellent shape retentivity and texture having respectively specific ratio of specific gravity, average particle diameter of air bubble and half-life of air bubble ejected from a spray vessel. CONSTITUTION:High-pressure gas such as carbonic acid gas, a food composition, preferably protein, polymeric polysaccharides and at least a species of surfactant is sealed in a spray vessel preferably so as to have 2-9kg/m pressure at ejection to eject the aimed foam food having 0.1-0.4 specific gravity in containing air bubble/specific gravity before containing air bubble, =10min half-life of air bubble.
