Zusammenfassung:PURPOSE:To obtain the subject slightly fermentable dextrin suitable for a foodstuff for people requiring to control intake of calorie and hydrocarbons by heating a starch (partially hydrolyzed substance) in the presence of a specified saccharide such as lactose and an acid catalyst. CONSTITUTION:A starch (partially hydrolyzed substance) is heated in the presence of one or more saccharides selected from lactose, sucrose and guar-gum (partially hydrolyzed substance) and a catalyst consisting of an inorganic or organic acid, thus obtaining the objective dextrin.
