Zusammenfassung: | PURPOSE:A freeze point depressing agent which is added to foods to reduce freezing points and to enlarge a freezing temperature range and can preserve them suitable as foods without damaging taste, etc., comprising a (concentrated) extract of natural agricultural, marine or dairy product and a substance having reducing action on freezing point. CONSTITUTION:A natural agricultural, dairy or marine product such as vegetables, fruits, fishes and shellfishes, animal meat, etc., is ground and extracted by filtration, pressing, etc., to give an extract or a concentrated extract, which is blended with one or more substances having reducing action on freezing point such as organic acid, salt thereof, saccharide, alcohol, e.g., salt, ethyl alcohol, sodium acetate, sodium lactate, acetic acid, sugar, sorbitol, etc., and, if necessary, a water-soluble gelatin enzyme decomposition product to give a novel freezing point depressing agent for foods. |
