Zusammenfassung:PURPOSE:To obtain a naturally occurring antimicrobial agent which shows high stability, can be applied to food or food products and manifests growth- inhibiting action against over a wide range of microorganisms by using, as an active ingredient, an essence of seeds of PANGI (a leguminous plant growing in north Borneo). CONSTITUTION:PANGI seeds are pressed, leached or extracted to collect an essence, which is used as an active ingredient to give the subject antimicrobial agent. This agent is added to, for example, a food product to inhibit the growth of a wide range of microorganisms such as fungi. The amount of the essence added is preferably about 10 to 2,000ppm.
