Zusammenfassung:	PURPOSE:To prepare a low molecular chitosan useful as a coagulant or solubility-accelerating agent and not containing an excessive amount of a salt by treating chitosan with a specific chitosanase and subsequently separating the produced chitosan oligosaccharide. CONSTITUTION:Chitosan is treated with the following chitosanase and the produced objective chitosan oligosaccharide is separated from the product. The chitosanase is a novel chitosanase having the following physicochemical properties: (i) the action; when the beta-1,4 bond of the chitosan is hydrolyzed, the chitosan oligosaccharide is produced, but any monosaccharide is not produced. (ii) The specificity of the substrate; the chitosanase hydrolyzes the chitosan and carboxylmethyl cellulose. The lower the deacetylation degree is, the more slightly the chitosan is hydrolyzed and chitin is not hydrolyzed.
