Zusammenfassung:	PURPOSE:To obtain the title dietary fiber causing no discoloration with serum cholesterol increase-and hypertension-inhibitory effects etc., expected, by bleaching the periderm of grain through e.g. oxidative treatment followed by alkali extraction. CONSTITUTION:The periderm of grain (e.g. wheat, barley, rye, corn, foxtail millet) is bleached by oxidative and/or reductive treatment followed by alkali extraction to obtain the objective dietary fiber. It is preferable that before or after bleaching treatment, the periderm of the grain be freed from starch, protein and fat.
