Zusammenfassung:PURPOSE:To eliminate milky smell peculiar to an animal milk, convert irritant acid taste into mild taste and obtain the subject dairy product with smooth texture without strange taste, offensive smell and discoloration by adding an embryo bud extract to the animal milk and subjecting the milk to lactic acid fermentation. CONSTITUTION:The objective diary product obtained by adding an embryo bud extract prepared by extracting embryo buds with water and a hydrophilic organic solvent (preferably ethanol) to an animal milk, adding lactic acid bacteria, such as Streptococcus thermophillus, thereto and subjecting the milk to lactic acid fermentation.
