Zusammenfassung:	PURPOSE:To form microbial cells into a particular or granular shape, reduce tackiness, facilitate oxygen feed and obtain the subject lipid in high yield by keeping a carbon source in a culture medium in a low concentration and applying a physical stress thereto in culturing a mold. CONSTITUTION:A microorganism (e.g., Mortierella alpina.ATCC32221), belonging to the genus Mortierella and capable of producing unsaturated fatty acids is cultured using a carbon source as a restriction substrate and/or cultured in a liquid culture medium under conditions of, e.g., pH4-7 and 20-30 deg.C for 2-30 days, while applying >=5kg/m .sec physical stress to afford the objective lipid.
