Zusammenfassung:	PURPOSE:To obtain the subject pickling device promoting fermentation of pickling medium by lactic acid, etc., and obtainable pickles in a short time by placing a vessel on oscillating table having vibrator, packing vegetables and pickling medium such as salt or rice bran in the vessel and placing weight on the medium. CONSTITUTION:A vessel 1 is placed on an oscillating table 5 having vibrator 6 and vegetables are packed in the vessel 1 together with pickling medium such as salt or rice bran, then a weight 4 made of, e.g., a steel ball 2 sealed with synthetic resin film 3 is placed on the pickling medium to obtain the aimed pickling device. Pickling state is controlled in the manner of decreasing amplitude of oscillation for leaf vegetables and increasing the amplitude for root vegetables by controller C.
