Zusammenfassung:PURPOSE:To produce D-homophenylalanines at a low cost by reacting 5- phenethylhydantoins with a microorganism having the ability to asymmetrically cleave and hydrolyze hydantoin ring in an aqueous medium at pH 7-10. CONSTITUTION:5-Phenethylhydantoins expressed by formula I (X represents hydrogen, hydroxy group or lower alkyl group) are reacted with a culture of a microorganism having the ability to asymmetrically cleave and hydrolyze hydantoin ring, microbial cells or treated substance thereof in an aqueous medium at pH 7-10 and then converted into N-carbamoyl-D-homophenylalanines expressed by formula II (X is same as in formula I; * indicates R steric configuration relatively to asymmetric carbon atom). Microorganisms belonging to the genus Achromobacter, Aerobacter, Aeromonas, etc., are cited as specific examples of the above-mentioned microorganism.
