Zusammenfassung:	PURPOSE:To readily obtain a high-quality ester exchange oil in high yield in subjecting fats and oils to transesterification with lipase by controlling total weight mol concentrations of monohydric lower alcohol, water and diglyceride. CONSTITUTION:In subjecting fats and oils to transesterification with lipase, total weight mol concentrations of two or more selected from monohydric lower alcohol, water and diglyceride is controlled to be 70-400m mol/kg. 1,2(2,3) Diglyceride is preferable as the diglyceride. Preferably lipase is immobilized to an ion exchange resin and used.
