Zusammenfassung:PURPOSE:To provide the subject food containing highly pure whey protein and/or the hydrolysate of the protein, effective to lower the concentration of cholesterol in blood and to increase high density lipoprotein cholesterol, and not inducing the abnormality of the lipid metabolism. CONSTITUTION:The objective food contains highly pure whey protein containing whey protein in a rate of >=85wt.% as the solid content and/or the hydrolysate of the whey protein in a rate of >=30wt.% of proteins in the final product. The protein is obtained e.g. as follows: adjusting a whey acidic, allowing a cation exchange resin to adsorb the whey protein, eluting the adsorbed whey protein with an alkaline solution, adding water to the eluted solution, subjecting the solution to an ultrafiltration concentration and subsequently spray-drying the concentrated solution. The hydrolyzed product of the protein is preferably obtained by hydrolyzing the protein with an acid or an enzyme.
