Zusammenfassung:To provide a method for producing a lysophospholipid-containing composition that is obtained by decomposing phospholipids into lysophospholipids in a new method in which enzymatic decomposition of the phospholipids by phospholipase A even without using an organic solvent with removal progresses, the lysophospholipid-containing composition having self-emulsifying property and being easily used for various applications; and to provide a method for producing an oil-in-water type emulsion composition using the same.SOLUTION: Provide is a method for producing a lysophospholipid-containing composition, including the following steps: evenly mixing a raw material containing phospholipids, oil and fat, polyhydric alcohol and fresh water, which are essential raw materials, with phospholipase A, and starting enzymatic decomposition of the phospholipids by the phospholipase A; enzymatically decomposing the phospholipids for a mixture of the raw material and the phospholipase A to have a phospholipase A decomposition rate of 20%; and deactivating the phospholipase A in the enzymatically decomposed product. The lysophospholipid-containing composition obtained in the steps has self-emulsifying property and the ratios of the phospholipids, oil and fat, polyhydric alcohol and fresh water, which are essential raw materials for the composition are specific ratios. Provided also is also a method for producing an oil-in-water type emulsion composition using the same.SELECTED DRAWING: None 【課題】 本発明は、除去を伴う有機溶剤を使用しなくてもホスフォリパーゼAによるリン脂質の酵素分解が進行する新規な方法により、リン脂質をリゾリン脂質に分解し、得られるリゾリン脂質含有組成物は、自己乳化性を有し色々な用途にも使用し易いリゾリン脂質含有組成物の製造方法、およびこれを用いた水中油型乳化組成物の製造方法を提供する。【解決手段】必須原料であるリン脂質、油脂、多価アルコールおよび清水を含む原料、ならびにホスフォリパーゼAを均一に混合し、ホスフォリパーゼAによるリン脂質の酵素分解を開始する原料およびホスフォリパーゼA混合工程と、前記原料およびホスフォリパーゼA混合物をホスフォリパーゼA分解率20%以上となるようにリン脂質を酵素分解するリン脂質酵素分解工程と、前記酵素分解物中のホスフォリパーゼAを不活性化する酵素不活性化工程を含み、前記工程により得られたリゾリン脂質含有組成物は、自己乳化性を有し、前記組成物の必須原料であるリン脂質、油脂、多価アルコールおよび清水の割合が特定割合であるリゾリン脂質含有組成物の製造方法、およびこれを用いた水中油型乳化組成物の製造方法。【選択図】 なし
