Zusammenfassung: | To provide a microwave maturation device and a microwave maturation method, capable of maturating a food with safety and at a high speed.SOLUTION: A microwave maturation device comprises: a maturation chamber 33 that houses a food; a microwave oscillation part 20 that oscillates a microwave with which the inside of the maturation chamber 33 is irradiated; a cooling device 11 that cools an air in the maturation chamber 33; and a control part 50 that controls an operation of the microwave oscillation part 20 and the cooling device 11. The control part 50 controls the operation of the microwave oscillation part 20 and the cooling device 11 so that an internal temperature of the food is 10°C or more, and a temperature difference between a front surface temperature and the internal temperature of the food is 10°C or larger at the time of microwave irradiation.SELECTED DRAWING: Figure 14
