Zusammenfassung:To suppress odd flavor derived from a plant without spoiling delicious original plant-derived flavor, whereas even plant-derived milk with excellent flavor has slightly plant-derived smell of grain, or odd flavor.SOLUTION: In oil-in-water type emulsion containing plant-derived milk, blend of random transesterified fat having a specific fatty acid composition can maintain rich flavor of plant-derived milk, while suppressing odd flavor derived from plant milk.SELECTED DRAWING: None 【課題】風味が良好とされる植物由来の乳であっても、わずかながらその植物由来の穀物臭さ、異風味があることを発明者は見出し、植物本来の美味しい風味を損なわずに、植物由来の異風味を抑制することを課題とする。【解決手段】植物由来の乳を含む水中油型乳化物において、特定の脂肪酸組成を有するランダムエステル交換油脂の配合が、植物乳由来の異風味を抑制しつつ、植物由来の乳の持つ豊かな風味を維持できることを見出した。【選択図】なし
