Zusammenfassung:To provide an oil-in-water type emulsified food that can have a well-balanced combination of a body feeling felt in an oil-in-water type emulsified food having a high oil/fat content and a non-sticky natural melting-in-the mouth even when the oil/fat content is suppressed.SOLUTION: Provided is an emulsified food, which is an oil-in-water type emulsified food in which the contained amount of oil/fat is 28 to 65 wt.% and containing a thickener, and in which (A) the strain at a stress of 200 Pa obtained by dynamic viscoelasticity measurement of the emulsified food is 50 to 4000%, and (B) [strain at a stress of 200 Pa]/[strain at a stress of 200 Pa] is 3.5 to 15.SELECTED DRAWING: None 【課題】油脂含量が抑えられていても、油脂含量の多い水中油型乳化食品に感じられるボディ感と、べたつかない自然な口どけとをバランス良く兼ね備え得る水中油型乳化食品の提供。【解決手段】油脂の含有量が28~65重量%であり、増粘剤を含有する、水中油型乳化食品であって、当該乳化食品を動的粘弾性測定して得られる(A)応力200Paのときの歪みが、50~4000%であり、かつ(B)[応力200Paのときの歪み]/[応力200Paのときの歪み]が、3.5~15である、乳化食品。【選択図】なし
