Zusammenfassung: | To provide an unprocessed edible shrimp with high transparency while maintaining texture and good taste and its production method.SOLUTION: One edible shrimp of the present invention has transparency of 80% or more derived from treatment according to the following (1) to (3) of an open shrimp brought into contact with an acidic aqueous solution. (1) A placing treatment for placing the open shrimp with an opened side of the open shrimp directed upward on a planar body that has, when photographed from vertically above, a L value is 10 or less in a CIE1976 (L*, a*, b*) color system, and an absolute value of an a value and the absolute value of a b value are both 5 or less, (2) an image acquisition treatment for acquiring an image of the open shrimp by imaging the placement treated open shrimp from vertically upward, (3) after converting the image into a two-dimensional grayscale image having 256 levels of luminance value information, a white and black binarization treatment is applied with a region where the luminance value is 50% or more as a white image, and with a region where the luminance value is less that 50% as a black image, thereby a ratio of the region of the black image is derived as the transparency.SELECTED DRAWING: Figure 4
【課題】食感と味の良さを保持しつつ透明度の高い未加熱の食用海老及びその製造方法を提供する。【解決手段】本発明の1つの食用海老は、酸性水溶液に接触させた開き海老の、下記の(1)~(3)に従った処理により導出された透明度が、80%以上である。(1)鉛直上方から撮影したときに、CIE1976(L*,a*,b*)表色系において、L値が10以下であるとともに、a値の絶対値及びb値の絶対値がいずれも5以下である板状体の上に、前記開き海老の開いた側の面を上に向けて前記開き海老を載置する載置処理(2)前記載置処理された前記開き海老を鉛直上方から撮影し、前記開き海老の画像を取得する画像取得処理(3)該画像を256階調の輝度値の情報を有する二次元のグレースケール画像に変換した後、該輝度値が50%以上である領域を白画像とし、該輝度値が50%未満である領域を黒画像として識別する白黒二値化処理をすることにより、該黒画像の該領域の割合を該透明度として導出する二値化評価処理【選択図】図4 |
