The oil-and-fat processed starch is obtained by a process of adding, to starch, oils and fats with an iodine value of 120 or more, and oils and fats with an iodine value of 119 or less, and then applying an aging process thereto. The oil-and-fat processed starch is preferably used as a coating material for processed food, and as an additive for meat processing.SELECTED DRAWING: None
【課題】油脂加工澱粉としての性能と分散性や固結性を両立した油脂加工澱粉、その製造方法およびその用途を提供する。【解決手段】ヨウ素価が120以上の油脂およびヨウ素価が119以下の油脂を含む油脂加工澱粉からなる。この油脂加工澱粉は、ヨウ素価が120以上の油脂およびヨウ素が119以下の油脂を澱粉に添加し、その後熟成処理を施す工程によって得られる。この油脂加工澱粉は、揚げ物用衣材、肉加工食品用添加材として好ましく用いられる。【選択図】なし |
