Zusammenfassung: | To provide a gummy-like composition in which the gustatory of water-soluble functional components is prominently masked, and which has high palatability, and to provide a production method of the same.SOLUTION: A gummy-like composition contains gelatinous particles in which water-soluble functional components are wrapped by gellan gum and which has a diameter of 2 mm or less, and contains 1-20 wt.% of oil and fat. A production method of the gummy-like composition includes steps of: a first step of dispersing or emulsifying water-soluble functional components and a gellan gum aqueous solution in oil and fat; a second step of forming gelatinous particles in which water-soluble functional components are wrapped by gellan gum by gelatinizing gellan gum in the solution obtained in the first step, and which has a diameter of 2 mm or less; and a third step of mixing a solution containing the gelatinous particles obtained in the second step with a solution containing carbohydrate or water-soluble dietary fiber and gelatin.SELECTED DRAWING: None
