Zusammenfassung: | To provide a method for producing a powdery emulsified substance capable of reproducing only by adding hot water, with respect to an emulsion state (cloudy state) in which starch and oil and fat are integrated, and which is seen in a cooked commodity completed through a step (cooking of boiling in pot) of cooking while heating such as bagged noodles.SOLUTION: An emulsified powder is produced by an emulsified powder production method which includes steps of: preparing a first emulsion liquid by adding purified water, a starch decomposed product, polyglyceryl fatty acid ester and lecithin, and stirring, mixing and dissolving the product while heating; preparing a second emulsion liquid by stirring, mixing and dissolving an edible oil and sugar ester; adding the second emulsion liquid to the first emulsion liquid followed by stirring and mixing; and spray-drying the emulsion liquid after mixing. Lecithin may be added to the second emulsion liquid.SELECTED DRAWING: None
【課題】袋めんのように加熱しながら調理する工程(鍋炊き調理)を経て完成する調理商品に見られる、澱粉と油脂が一体となった乳化状態(白濁状態)について、熱湯を注加するだけで再現できるような粉末乳化物の製造方法の提供。【解決手段】精製水、澱粉分解物、ポリグリセリン脂肪酸エステル及びレシチンを加え加温しながら攪拌混合溶解させ第一乳化液を調製する工程、食用油及びシュガーエステルを攪拌混合し溶解させ第二乳化液を調製する工程、前記第一乳化液中に前記第二乳化液を添加し、撹拌・混合する工程、前記混合後の乳化液を噴霧乾燥する工程、の各工程を含む乳化粉末の製造方法により製造される乳化粉末。また、レシチンについては第二乳化液に添加してもよい。【選択図】なし |
