Zusammenfassung: | To provide a wheat flour composition for biscuit, for obtaining biscuit which is excellent in workability in production, and is excellent in crispy texture and melting feeling in the mouth.SOLUTION: A wheat flour composition for biscuit comprises wheat flour, and contains grain wet-heat treated GA-SX wheat flour. The grain wet-heat treated GA-SX wheat flour is obtained by milling wet-heat treated GA-SX wheat grains. The GA-SX wheat grains are the harvest of wheat which is not deficient in an enzyme activity of GBSSI-A1, is deficient in enzyme activities of GBSSI-B1 and GBSSI-D1, and is deficient in enzyme activities of two either of SSIIa-A1, SSIIa-B1 and SSIIa-D1. A value obtained by dividing a wet gluten mass per unit mass, recovered from the grain wet-heat treated GA-SX wheat flour with a wet gluten mass per unit mass, recovered from the grain wet-heat untreated GA-SX wheat flour is 0.6 or less. A percentage content of the grain wet-heat treated GA-SX wheat flour in the total amount of the wheat flour composition for biscuit is 10 mass% or more.SELECTED DRAWING: None
【課題】製造時の作業性に優れ、サクサクとした食感及び口溶けに優れたビスケット類を得るためのビスケット類用小麦粉組成物を提供する。【解決手段】本発明のビスケット類用小麦粉組成物は、小麦粉からなり、穀粒湿熱処理GA−SX小麦粉を含み、前記穀粒湿熱処理GA−SX小麦粉は、湿熱処理されたGA−SX小麦穀粒を製粉して得られ、前記GA−SX小麦穀粒は、GBSSI−A1の酵素活性を欠損しておらず、GBSSI−B1及びGBSSI−D1の酵素活性を欠損し、かつ、SSIIa−A1、SSIIa−B1及びSSIIa−D1のうちのいずれか2つの酵素活性を欠損したコムギの収穫物であり、単位質量当たりの穀粒湿熱処理GA−SX小麦粉から回収された湿グルテン質量を単位質量当たりの穀粒湿熱未処理GA−SX小麦粉から回収された湿グルテン質量で除した値が0.6以下であり、前記ビスケット類小麦粉組成物の全量における穀粒湿熱処理GA−SX小麦粉の含有率が10質量%以上である。【選択図】なし |
