Zusammenfassung: | To mechanize filleting processing of seafood for reducing labor and time consumed by a cook for filleting, and to produce an efficient product with less loss by performing three-dimensional shape injection processing at the time of heating.SOLUTION: In a filleting technique for eel, an eel or the like is laid and a nail 4 is driven to a bucca of the eel, and after determining whether to cut the eel along a back or a belly, then the eel is laid and the nail is driven to the head of the eel, then the eel is cut from a rear part of a collar to a tail by a kitchen knife and then the kitchen knife is reversed for taking out a bone and intestines. This step is performed by a machine, and for a filleting processing step of seafood, one edge tool out of a kitchen knife, a knife, an electric cutter, a blade or the like is provided on an actuator, a robot, an air suction, a vacuum pump, or an air actuator via a metal fitting, in a filleting machine. By a robot or the like, the edge tool is moved by intention of a user, for mechanizing filleting work for filleting a fish body of an eel, a conger eel, a horse mackerel, a mackerel scad, Japanese butterfish, and arabesque greenling or the like into two pieces in a filleting device for seafood. 【課題】開き卸しの職人手間を超えて、魚介類の開き卸し加工を機械化して、さらに加熱時に、立体形状注入加工によりロスの少ない、効率的な製品を製造する。【解決手段】本ウナギ開き下し技術では、ウナギ等を横に寝かせて頬に釘4を打ち、背開き、又は、腹開きかを決めた後、横に寝かせ頭部にくぎを打ち、包丁を入れカマの後あたりから尾に向けて裂いて包丁を返して、骨、ワタを取り出す。この工程を機械で行い、魚類の開き卸し加工工程にアクチュエータ,ロボット、エアーサクション,真空ポンプ、エアーアクチュエータなどに、金具を介して、包丁、ナイフ、電動カッター、剃刀等の内の一つの刃物を具備させ刃物を組み合わせたおろし製造機械。ロボットなどで、刃物を思い通りに移動させウナギ、アナゴ、アジ、ムロアジ、エボダイ、ホッケ等の魚体の2枚卸し作業を機械化して、魚介類の開き卸し装置、及び、該加工で得られた開き水産物の加工製品。【選択図】図1 |
