Zusammenfassung:To provide a production method of a rice gruel jelly material, suitable for industrial production, and to provide a rice gruel jelly material obtained by the production method, and easily reconstituted in hot water.SOLUTION: A production method of a rice gruel jelly material includes steps (a) to (e) as follows: (a) a step of adding an enzyme for hydrolyzing α-1,4-glycoside bond, a gelatinizer and water to non-pregelatinized grain flour; (b) a step of heating the mixture obtained in the step (a) at a temperature at which the enzyme for hydrolyzing α-1,4-glycoside bond can act, and a viscosity by the gelatinizer can be expressed; (c) a step of further heating after the step (b) so as to deactivate the enzyme for hydrolyzing α-1,4-glycoside bond; (d) a step of performing freeze-drying treatment after the step (c); and (e) a step of pulverizing the obtained freeze-dried object after the step (d).SELECTED DRAWING: None 【課題】本発明の目的は、工業的製造にも適した、粥類ゼリーの素の製造方法、および該製造方法により得られる、お湯により復元容易な粥類ゼリーの素を提供することにある。【解決手段】以下の(a)〜(e)の工程を行う。(a)α化していない穀粉に、α−1,4−グリコシド結合を加水分解する酵素、ゲル化剤および水を加える工程(b)上記(a)の工程で得られた混合物を、前記α−1,4−グリコシド結合を加水分解する酵素が作用可能で、かつ前記ゲル化剤による粘性の発現が可能である温度で加熱する工程(c)上記(b)の工程の後、さらに加熱して前記α−1,4−グリコシド結合を加水分解する酵素を失活させる工程(d)上記(c)の工程の後、凍結乾燥処理する工程(e)上記(d)の工程の後、得られた凍結乾燥処理物を粉砕処理する工程【選択図】なし
