Zusammenfassung:To provide a cheese-like food product having high producibility; and to provide a raw material for producing such a cheese-like food product.SOLUTION: There is provided acetylated starch for a cheese-like food product. In the acetylated starch, potato starch is used as a raw material, the degree of acetylation is 1.0% or higher and 2.5% or less, and a gelatinization peak temperature is 80°C or lower, when measuring the acetylated starch by a rapid visco-analyzer at the rate of temperature rise of 1.5°C/min.
