METHOD OF PRODUCING LOW-FAT, PLASTIC, WATER-IN-OIL TYPE EMULSION FAT COMPOSITION

To provide a new method, regarding producing a low-fat, plastic, water-in-oil type emulsion fat composition containing only a small amount of oil, of producing the low-fat, plastic, water-in-oil type emulsion fat composition continuously in a cycling manner using an existing production line for margarine or fat spread.SOLUTION: This invention relates to a method of producing a low-fat, plastic, water-in-oil type emulsion fat composition containing 15-50 mass% of oil, the method including: preparing an oil-in-water type emulsion fat composition containing 2.5-15% of solid fat at 20°C; and, after subjecting the low-viscosity oil-in-water type emulsion fat composition to pass through a plate-type heat exchanger, cooling and subjecting the fat composition to be phase-inverted into a water-in-oil type emulsion fat composition in the production line to be a product of the plastic, water-in-oil type emulsion fat composition. The cyclable method of producing the low-fat, plastic, water-in-oil type emulsion fat composition continuously in a cycling manner, thereafter, via a step of melting part of the surplus remaining product, proceeds to a step of phase-inverting again the water-in-oil fat composition by applying force of 0.3-2 MPa to the molten water-in-oil type emulsifying fat composition.SELECTED DRAWING: None 【課題】油分を少量しか含まない低脂肪可塑性油中水型乳化油脂組成物の製造に関し、既存のマーガリンやファットスプレッド類の製造ラインを用いた低脂肪可塑性油中水型乳化油脂組成物を連続的に循環製造する新たな方法の提供。【解決手段】油分を１５〜５０質量％とする低脂肪可塑性油中水型乳化油脂組成物の製造方法において、２０℃における固体脂含量を２．５〜１５％とした水中油型乳化油脂組成物を調製し、この低粘度の水中油型乳化油脂組成物をプレート式熱交換器中に通液させた後、冷却して製造ライン中で油中水型乳化油脂組成物に転相させて製品の可塑性油中水型乳化油脂組成物とする。その後、一部の余剰の製品を融解する工程を経て、溶融した油中水型乳化油脂組成物に０．３〜２ＭＰａ圧力を印加して再び転相させ、水中油型乳化油脂組成物を経る、循環可能な、低脂肪可塑性油中水型乳化油脂組成物を連続的に循環製造する方法。【選択図】なし
