DETERIORATION INHIBITOR FOR SAKE, SAKE FOR WHICH DETERIORATION IS SUPPRESSED AND PRODUCTION METHOD OF THE SAKE

To provide a deterioration inhibitor for sake for inhibiting activity of isoamyl alcohol oxydase (IAAOD) which is enzyme for generating iso-valeraldehyde (i-Val) being a main factor of namahineka being one of a deterioration odor of sake, reducing the deterioration odor of the sake, and maintaining flavor and taste unique to the raw sake, and not inhibiting enzyme required for maturation of the sake, and properly performing maturation of the sake.SOLUTION: The deterioration inhibitor includes montmorillonite. According to the deterioration inhibitor of the sake of the invention, montmorillonite being a clay mineral inhibits activity of IAAOD which is enzyme for generating i-Val and hardly inhibits activity of enzyme required for maturation of the sake. Therefore the sake for which deterioration is suppressed by the deterioration inhibitor, is suppressed in deterioration due to generation of i-Val, and taste and flavor unique to raw sake can be maintained, and maturation can be properly executed.SELECTED DRAWING: None 【課題】清酒の劣化臭の一つである生老香の主因子となるイソバレルアルデヒド（ｉ−Ｖａｌ）を生成する酵素であるイソアミルアルコールオキシダーゼ（ＩＡＡＯＤ）の活性を阻害し、清酒の劣化臭の低減を図りつつも、原酒特有の香りや味を維持することができ、清酒の熟成に必要な酵素類については活性阻害することなく、清酒の熟成を適度に図ることができる、清酒の劣化抑制剤を提供する。【解決手段】劣化抑制剤は、モンモリロナイトを含有する。本発明の清酒の劣化抑制剤によれば、粘土鉱物であるモンモリロナイトが、ｉ−Ｖａｌを生成する酵素であるＩＡＡＯＤの活性を阻害し、清酒の熟成に必要な酵素類については活性を阻害し難い。このため、劣化抑制剤によって劣化が抑制された清酒は、ｉ−Ｖａｌの生成による劣化が抑制され、かつ、原酒特有の香りや味を維持し、適度に熟成を図ることができる。【選択図】なし
