To provide a fat composition for kneading in, a plastic fat using the same, a dough, and a calcined product.SOLUTION: The fat composition for kneading in comprises: 5-65 mass% to a whole fat amount of an ester-exchanged fat (A) obtained by ester-exchanging 5 mass% or more and less than 30 mass% of a laurin-based fat (A1) containing 30 mass% or more of lauric acid with more than 70 mass% and 95 mass% or less of a palm-based fat (A2) containing 35 mass% or more of a fatty acid having a carbon number of 16 or more; and 35-95 mass% of a fat (B) having a total ratio of a triglyceride having a total carbon number of 46 to a triglyceride having a total carbon number of 48 of 1-25 mass%. In the fat composition for kneading in, the total of a 2 saturated and a 3 saturated triglyceride is 30-65 mass%, the mass ratio of a symmetric to an asymmetric triglyceride is 0.1-1.5, and the content of a triglyceride having a total carbon number of 40-48 is 5.0-30 mass%.
