Zusammenfassung:To provide a fat composition for kneading in, a plastic fat using the same, a dough, and a calcined product.SOLUTION: The fat composition for kneading in comprises: 5-65 mass% to a whole fat amount of an ester-exchanged fat (A) obtained by ester-exchanging 5 mass% or more and less than 30 mass% of a laurin-based fat (A1) containing 30 mass% or more of lauric acid with more than 70 mass% and 95 mass% or less of a palm-based fat (A2) containing 35 mass% or more of a fatty acid having a carbon number of 16 or more; and 35-95 mass% of a fat (B) having a total ratio of a triglyceride having a total carbon number of 46 to a triglyceride having a total carbon number of 48 of 1-25 mass%. In the fat composition for kneading in, the total of a 2 saturated and a 3 saturated triglyceride is 30-65 mass%, the mass ratio of a symmetric to an asymmetric triglyceride is 0.1-1.5, and the content of a triglyceride having a total carbon number of 40-48 is 5.0-30 mass%. Also provided are a plastic fat using only the fat composition for kneading in, a dough using the plastic fat, and a calcined product.SELECTED DRAWING: None 【課題】練り込み用油脂組成物とそれを用いた可塑性油脂、生地及び焼成品の提供。【解決手段】ラウリン酸含有量が30質量%以上であるラウリン系油脂(A1)5質量%以上30質量%未満と、炭素数16以上の脂肪酸が35質量%以上であるパーム系油脂(A2)70質量%超95質量%以下とのエステル交換油脂(A)が油脂全量に対して5〜65質量%であり、総炭素数が46であるトリグリセリドと総炭素数が48であるトリグリセリドとの合計割合が1〜25質量%である油脂(B)が35〜95質量%である、練り込み用油脂組成物。該練り込み用油脂組成物は2飽和及び3飽和トリグリセリドの合計が30〜65質量%、対称型と非対称型トリグリセリドとの質量比が0.1〜1.5、総炭素数が40〜48であるトリグリセリドが5.0〜30質量%である。および、該練り込み用油脂組成物のみを用いた可塑性油脂、該可塑性油脂を用いた生地及び焼成品。【選択図】なし
