To provide an environment forming device and an environment forming method that allow a target humidity to be reached in a relatively short time.SOLUTION: An environment forming device includes a cooling device and a dehumidifying device. When lowering humidity in a space, the temperature of an evaporator is adjusted to a freezing point temperature or lower and the humidity in the space is lowered. An evaporator temperature raising process in which an evaporator temperature is raised after the humidity in the space reaches the humidity of a target environment or its vicinity is performed so that the evaporator temperature is raised to the temperature higher than the freezing point temperature. An increase in the humidity in the space is suppressed by the dehumidifying device, and the humidity in the space is kept at the humidity of the target environment.SELECTED DRAWING: Figure 4 【課題】比較的短時間の内に目標湿度に達することが可能な環境形成装置及び環境形成方法を提供する。【解決手段】冷却装置と、それ以外の除湿装置を有している。空間内の湿度を低下させる際に、蒸発器の温度を氷点温度以下に調整して空間内の湿度を低下させる。空間内の湿度が目標環境の湿度又はその近傍に至った後に前記蒸発器の温度を上昇させる蒸発器温度上昇工程を実施して蒸発器の温度を氷点温度を超える温度に上昇させる。除湿装置によって空間内の湿度上昇を抑制して空間内の湿度を目標環境の湿度に維持する。【選択図】図４
