Zusammenfassung:To provide methods and systems for production of low water activity fillings which permit use in rotary sandwiching machines without the need for a cooling tunnel downstream of a scraped-surface heat exchanger in a production line.SOLUTION: There is provided a method comprising: heating a fat component to a temperature of at least 5.56°C higher than a melting point of the fat component; combining a sugar source with the fat component and continuously mixing the fat component and the sugar source while maintaining the temperature to form a slurry; introducing the slurry at the temperature into a scraped-surface heat exchanger; cooling the slurry in the scraped surface heat exchanger at a cooling rate of about 3.89 to about 40°C/minute; and dispensing the slurry from the heat exchanger at a temperature effective to provide the filling, where the slurry comprises the fat component of about 20 to about 50% and the sugar source of about 50 to about 80%.SELECTED DRAWING: None 【課題】製造ラインのかき取り表面熱交換器の下流側で冷却トンネルを必要とせずに、回転サンドイッチ機を使用することが可能な低水分活性フィリングを製造するための方法及びシステムの提供。【解決手段】脂肪成分を前記脂肪成分の融点より少なくとも5.56℃高い温度まで加熱することと、その温度を維持しながら、脂肪成分を糖源と組み合わせ、脂肪成分と糖源を連続的に混合して、スラリーを形成することと、前記温度でスラリーをかき取り表面熱交換器に入れることと、約3.89〜約40℃/分の冷却速度でスラリーをかき取り表面熱交換器内で冷却することと、フィリングを提供するのに効果的な温度で、スラリーを前記熱交換器から分配することと、を含み、スラリーは、約20〜約50%の脂肪成分と、約50〜約80%の糖とを含有する、方法。【選択図】なし
