Zusammenfassung:To provide a fried noodle mass suppressed in inversion in a cup due to an impact from the outside, in a state of being enclosed in a cup-shaped container.SOLUTION: A fried noodle mass is produced by: storing a noodle string group after being pregelatinized in a retainer provided with a projection in the bottom center part; soaking in a frying oil, the lower part of a frame mold after storing the noodle string group, and subjecting the lower part of the noodle string group to frying treatment for a prescribed time; and soaking the entire retainer in frying oil followed by subjecting to frying treatment. The fried noodle mass is suitably usable as a fried noodle mass for an instant noodle in a cup enclosed in a cup-shaped container.SELECTED DRAWING: Figure 8 【課題】カップ状容器に封入された状態において、外部からの衝撃によるカップ内での反転が抑制されるフライ麺塊を提供する。【解決手段】本発明においては、α化後の麺線群を、底面中央部に凸状部を設けたリテーナに収納し、麺線群収納後の型枠の下方部分をフライオイルに浸漬して麺線群の下方部分を所定時間フライ処理した後に、前記リテーナの全体をフライオイルに浸漬してフライ処理してフライ麺塊を製造する。当該フライ麺塊は、カップ状容器に封入されるカップ入り即席麺用のフライ麺塊として好適に利用できる。【選択図】図8
