Zusammenfassung: | To provide an aging method of meat capable of suppressing a trimming amount to the minimum amount in a short time in a household refrigerator; and to provide an aging device used for its execution.SOLUTION: In an aging method of meat, the meat is arranged in an independent space provided in a household refrigerator, and cooled by ventilating cold air into the household refrigerator, a temperature in the space is maintained at 2°C or higher and 5°C or lower, a humidity in the space is maintained at 87% or more and 98% or less, and while maintaining the temperature and the humidity in the space, the meat is exposed to wind having an air capacity of 0.18 m/min or more and 10 m/min or less, to thereby age the meat.SELECTED DRAWING: Figure 1
