Zusammenfassung: | PROBLEM TO BE SOLVED: To provide a novel powdery soybean protein raw material enhancing transparency of a solution thereof without reducing extraction efficiency of protein and a manufacturing method therefor.SOLUTION: There is provided a powdery soybean protein raw material satisfying following a) to e). a) containing one or more kind of emulsifier selected from sorbitan fatty acid ester, glycerine fatty acid ester and sucrose fatty acid ester. b) containing dextrin. c) having crude protein content of 63.1 to 88.8 wt.%. d) having 0.22 M trichloroacetic acid soluble percentage of 10% or less. e) having solution turbidity when water is added to set crude protein content of 0.5 wt.% and absorbance of the solution at 600 nm by a spectrophotometer of 0.26 to 0.46.SELECTED DRAWING: None
【課題】蛋白の抽出効率を低下させることなく、その水溶液の透明性を向上させる、新規な粉末状大豆蛋白素材およびその製造方法の提供。【解決手段】下記a)〜e)を満たす粉末状大豆蛋白素材である。a)ソルビタン脂肪酸エステル,グリセリン脂肪酸エステルおよびショ糖脂肪酸エステルから選択される一種類以上の乳化剤を含有する、b)デキストリンを含有する、c)粗蛋白含量が63.1〜88.8重量%である、d)0.22Mトリクロロ酢酸可溶率が10%以下である、e)粗蛋白含量が0.5重量%となるように水を加え、分光光度計で該溶液の600nmの吸光度を測定したときの溶液濁度が、0.26〜0.46【選択図】なし |
